About Hob & Ember
Hob & Ember is an independent English-language magazine about home cooking, kitchen tools and equipment, and cooking over fire. It publishes methodical guides that help you choose, check and look after what you cook with, and understand the ingredients and techniques you use.
What we publish
- Buying and using guides for knives, pans, small appliances, grills and accessories: what the specifications mean, which criteria matter, and which do not.
- Neutral comparisons of well-known models, based on what manufacturers publish and on how the products are designed, not on sales rankings.
- Technique and ingredient pieces, from choux pastry to black garlic, with the food-safety facts that go with them.
- Kitchen organisation and hygiene, built on official guidance from food-safety agencies.
How guides are researched
We want to be precise about what our method is, and what it is not.
- Published sources first. Manufacturer specifications and manuals, product standards (UL, NSF/ANSI, ISO, EN), certification programmes such as ENERGY STAR, and guidance from public bodies such as the USDA, FDA, CDC, CPSC, NFPA and the UK Food Standards Agency. Sources are linked in each article.
- No invented testing. Hob & Ember does not run a test laboratory and does not present lab results, scores or star ratings. When an article says "test it at home", it describes a check you can do yourself, explains what it shows, and says what it cannot show.
- Honest about uncertainty. When published figures disagree, or a model has been revised, the guide says so and tells you where to check, usually the rating label or the manual.
- Safety is not optional. Gas, charcoal, blades, hot oil and food storage come with rules. Our guides state them with their official source.
- Dated and corrected. Every article carries a date. If something is wrong or out of date, we correct it and change the update date.
Independence
Hob & Ember has no affiliate links, accepts no sponsored content or paid placements, sells nothing and receives no free products in exchange for coverage. Brand and model names appear only to identify the products discussed; trademarks belong to their owners, and no guide implies endorsement by, or affiliation with, any brand. Articles are signed with the name of the publication. Publisher details are on the legal notice page.
About this domain
The domain kitchennin.com previously hosted a different website: from roughly 2018 to the early 2020s it published product round-ups and reviews of kitchen and barbecue gear, with links to online retailers. That website and its owner have no connection with Hob & Ember. We have not reused any of its text, images, ratings or branding. Because other sites still link to some of its old addresses, we have written new, independent guides on the same subjects at several of those addresses (for example on meat slicers, lump charcoal and crepe pans), and redirected other old addresses to the closest new page.
